Roasted Pork Loin with Peppers



This is my easy go to dish when I want to cook for my weekday meal. What I love about it is that, I can marinate the meat either overnight or for just a few hours and then I can simply chuck the meat into the oven to roast together with the sliced peppers. 

I use pork loin because there is some fats in this cut. It makes the roasted meat moist and very tasty. I hate lean pork! It is so dry and I find it so hard to swallow. But my partner begs to differ. His choice is always lean meat and he worries that my arteries are clogged hah...hah...hah...


I love the roasted peppers due to that smokey aroma that they impart. And they go so well with the roasted meat. You can pretty much make up your own marinade for the meat and it will come out tasty every time.











Roasted Pork Loin with Peppers

Ingredients
- 6 pieces pork loin (approximately 900g)
- 1 red pepper, sliced
- 1 green pepper, sliced
- 1 yellow pepper, sliced
- 6 cloves garlic, crushed
- pepper
- 5 tbsp soya sauce
- 5 tbsp tomato ketchup
- 1 tbsp Hoisin sauce

Method :
1. Mix garlic, soaya sauce, tomato ketchup and Hoisin sauce to make the marinade.
2. In a bowl, mix the pork loin with the marinade and leave for a few hours or overnight in the fridge to marinate.
3. Take the meat out from the fridge at least an hour before roasting.
4. Line a baking tray with aluminium foil and place meat in a single layer.
5. Put peppers between the meat and roast at 180C for about 40 minutes (flipping the meat at half time) or until the meat is cooked.

  2. Roasted peppers....I like...but I've never thought of putting them together with meat coz I've always thought that the peppers will cook way before the meat does and render them too soft. I usually see sturdier veggies being used like carrots, sweet potatoes, pumpkins, squash or onions.

    1. I sliced the peppers thicker to take into account the cooking time and they turned out alright :)

  4. Wow! Sedap! I could smell it from my office's PC. Long ago I only ate pure lean meat as I heard fats are No-No! Later I heard doctors say that some fats could be good for our joints and cartilage! Bingo! Now I am eating fried lard like pop corns. I still need to climb hills for my coming travels and joints have to be greased lah.

  5. My preference is the same as you (my grandma too), but my mom's preference is the same as your partner when it comes to pork. Pure lean pork can really be nasty at times!

    I remember towards the last years when my grandma was still around, my mom would periodically buy 100% lean meat roasted pork from the market to serve for meals at home.

    She claims it is because grandma loves roasted pork and she is buying grandma's favorite food. No matter how many times I try to tell her "Her favorite food is roasted pork with fatty pork, lean meat roasted pork is her number 1 enemy!", but my mom just wouldn't get it, then she will always be perplexed as to why grandma would never touch the stuff that she bought and claim grandma is trying to spite her.

    I don't understand some old people, something that they don't like, they will just refuse to comprehend and feign ignorance no matter how you try to explain.

    So my solution was, I would always sneak some fatty pork home for grandma when the window of opportunity is there. Maybe what I did was bad for her health and indirectly contributed to her going away, but I thought at least she get to be happy occasionally rather than being sulky all the time. :|

    1. Ah! A kindred soul! Your mum is quite strong on what she believes is best for your family's health. Pity your grandma and I don't think what you did was bad. You were giving her what she loved to eat and I am sure she was happy. Yeah, moderation is the key and it should be OK to eat fats once in a while.

  8. aiyoyo this surely looks good!!! reminds me of my "maiden roast" in the office pantry, haha!!

    putting the meat aside, I actually like veggie roasted or grilled, find them kind of more juicy and flavorful cooked this way.. look at your capsicum of the traffic light colors, besides adding flavor to the dish, they definitely make the color more inviting and dish more appetizing..

    so you marinated your pork loin for just a few hours?? so unlike he kiasu me to leave my chicken marinating in the fridge for two overnights, hahaha!! I like that color.. so you actually roast them in whole pieces and then only cut them into strips.. ever thought of cut them into strips and then only marinate and then bring them to roast?? hehe, like that probably more shyiok?? :p

    1. hah..hah...I would have marinated longer if I had the time. Two days mandi in the marinade will make the meat taste even better! It is better to roast the meat in one whole piece to minimize loss of moisture.

  9. I used to stir fry lean pork meat strips with bell peppers strips but your roasted pork loin with peppers dish here sounds very tasty too except that I prefer lean meat like your partner.
