Roasted Broccoli and Tomato Salad


Last weekend when I put on my "slim" pants, I was quite alarmed that it was very tight at the waist. Same thing with the thigh, there was much less room than before. Losing weight is relatively easy but it is maintenance that is the killer.

I told myself that upon reaching my target weight, I would allow myself one cheat day a week. And what did I do? I had one too many. And what happened? I piled on some of the pounds that I lost.

Before it gets too far (i.e. me not being able to get into my pants!), I have to behave and cut down on my carb intake. No more feasting on a tray of warm chewy cookies in front of the telly or taking pleasure in a (big) bowl of pasta. At least until my pants feel comfortable again.


So. Instead of cookies, I had to make do with a salad (and some protein) to accompany me while I binge on Strictly Come Dancing on Sunday evening. Yeah, I love to watch people dance while I stuff my face with cookies errr... no....salad.


So I roasted a head of broccoli and some cherry tomatoes.


Then I grated a small carrot and made a dressing. Tossed them all up and got me a nice bowl of salad.


Recipe? Nah...I don't think you want to eat this thing. Hah!

  1. Broccoli is one of my favourite veggies. I like it raw or just cooked - not too soggy. I like the look of your salad.

  2. Yup, reducing weight is the easy part but keeping the weight off is difficult. Isn't that the crux of all our dieting problems. Yes, I want to eat this salad....especially if the veggies are roasted or grilled. And yeah, you don't need any recipes for salads, you just throw whatever you have in the fridge. I've never watched Strictly Come Dancing, I'm more of a Dancing with the Stars fan! ;)

    1. Oh, I love Dancing with the Stars (US version of Strictly) too! Not just the dancing but the comments and antics of the judges especially Bruno Tonioli :) And I like calling out the scores before the judges do it hee..hee...

      This broccoli salad would go really well with Kewpie Roasted Sesame dressing. Next time!

  3. I want to eat your broccoli, carrot, tomatoes salad bowl. Looks delicious! but I don't need a recipe because if I were to make my own, I would just steam them all except for the tomatoes I will eat raw.

  6. My husband does ^_^ Right now he is on diet mode. Just because a mother of his not-so-close-friend told him straight to the face that he needs to put down weight in their first ever meeting! He came home sad, 'blaming' me for making him that big and asked me to make a note on what to eat & what not, prepare a daily list for his diet food and blahblahblah. I feel so tired helping him to diet and so, I have my cheat day everydahlah!

    1. Adoi! I hate it when people just blurt out comments like that. It is so hurtful >.< Anyways, since your hubby wants to lose weight, then you just give him all the sayur mayur. Salad no need cooking mah...

  7. It has gone into my head after reading your many posts about No Carbs! Yesterday evening, I just drank a liter of boiled soup consisting of half chicken, a quarter pumpkin, three tomatoes and one big onion. That was my dinner! By 9pm or so, I took four pieces of Julie's square biscuits... and I feel lighter this morning.. LOL..

  8. Sometimes putting on weight has got to do with genes. People like me will grow fat from just smelling nice food. LOL!!! Of course, sometimes it has got to do with age too. Sobssss!!!!

  9. Hey, just relax and buy those pants with stretchable material. Extra 5 kgs will still fit your fat waist and thighs! If still cannot, then wear Baju Kurung like Rosmah.
    Your salad food would make all the goats and horses happy. I am surprised that you didn;t banjir it with Kewpie sauces and shredded chicken meat. I need to loose weight after my binge eating trip to sinful Penang Island.

  15. I love broccoli and tomato cherries. Never thought of using both in my salad.

    Almost every morning I would pop few tomato cherries into my mouth. Haha. I am crazy over it. ^^

    I just stir fry broccoli with sweet corn and mushroom last night. My kids like broccoli.
